I love making my own peanut butter and almond butter so I thought, why not try it with pecans? This stuff is amazingly addictive! Smooth and creamy with the unique flavor of pecans – you won’t be able to keep yourself from devouring it by the spoonful. I love spreading it on dried apricots or plums or dolloping it onto oatmeal or toast.
- 2 cups pecans
- 1/2 cup cashews + 1/4 cup walnuts (you can play with these ratios but I found that you need the buttery-ness of cashews or walnuts to subdue the slightly bitter taste of pure pecans)
- 2 teaspoons sugar
- 1/2 teaspoon salt
- Preheat oven to 300 F and roast nuts on a dry sheet pan for 10-15 minutes until lightly toasted and fragrant.
- Allow nuts to cool for 10 minutes
- Place nuts in food processor and blend, scraping sides as needed until completely smooth. This can take anywhere from 4-12 minutes depending on your food processor. The nuts will go from powder, to think paste, to smooth and creamy – no oil necessary!
