Pecan Butter

I love making my own peanut butter and almond butter so I thought, why not try it with pecans?  This stuff is amazingly addictive!  Smooth and creamy with the unique flavor of pecans – you won’t be able to keep yourself from devouring it by the spoonful.  I love spreading it on dried apricots or plums or dolloping it onto oatmeal or toast.


  • 2 cups pecans
    • 1/2 cup cashews + 1/4 cup walnuts (you can play with these ratios but I found that you need the buttery-ness of cashews or walnuts to subdue the slightly bitter taste of pure pecans)
      • 2 teaspoons sugar
        • 1/2 teaspoon salt


            1. Preheat oven to 300 F and roast nuts on a dry sheet pan for 10-15 minutes until lightly toasted and fragrant.
            2. Allow nuts to cool for 10 minutes
            3. Place nuts in food processor and blend, scraping sides as needed until completely smooth.  This can take anywhere from 4-12 minutes depending on your food processor.  The nuts will go from powder, to think paste, to smooth and creamy – no oil necessary!
