Green Smoothies

Before you get squeamish about the color, trust me, these are delicious!  I first read about these nutrient packed smoothies on one of my favorite blogs, Oh She Glows. You can get creative with whatever fruits and vegetables you have on hand.  I like to top mine with a little crunch in the form of granola, chia seeds, or coconut and eat it with a spoon.

Ingredients:

  • 2 cups baby spinach
  • 1/3 of a small zucchini
  • 1/2 of a medium pear
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/2 teaspoon almond or vanilla extract
  • 1 packet of stevia or other sweetener
  • 1 tablespoon ground flax
  • 1 tablespoon cocoa powder, 1 tablespoon peanut flour (optional)
  • a few handfuls of ice

Method

  • Combine everything in a food processor until smooth and gradually add ice until desired consistency.
