Before you get squeamish about the color, trust me, these are delicious! I first read about these nutrient packed smoothies on one of my favorite blogs, Oh She Glows. You can get creative with whatever fruits and vegetables you have on hand. I like to top mine with a little crunch in the form of granola, chia seeds, or coconut and eat it with a spoon.
- 2 cups baby spinach
- 1/3 of a small zucchini
- 1/2 of a medium pear
- 1/2 cup almond milk
- 1/2 cup water
- 1/2 teaspoon almond or vanilla extract
- 1 packet of stevia or other sweetener
- 1 tablespoon ground flax
- 1 tablespoon cocoa powder, 1 tablespoon peanut flour (optional)
- a few handfuls of ice
- Combine everything in a food processor until smooth and gradually add ice until desired consistency.
